The protein-packed filling can be made with ground turkey, beef or even crumbled tofu. The other key ingredient is the delicious Mi Terra corn tortillas. - 1 lb ground turkey from Maine Family Farm (or beef)
- 1 teaspoon garlic powder
- 1 1/2 teaspoons ground cumin
- 1 1/4 teaspoons sea salt
- 1 teaspoon chili powder *
- 1/2 teaspoon dried oregano
- 1/2 small yellow onion, diced
- 1/2 cup tomato sauce
- 16 corn tortillas (Mi Tierra)
- 1 cup (4 ounces) Cabot Creamery cheddar cheese, shredded
In a large skillet over medium heat, add the ground turkey. Brown and crumble until cooked through. Stir in the spice mix and then remove from the pan. Cook the onion for about 5 minutes, then add the tomato sauce and return the cooked turkey to the pan. Simmer for 3-5 minutes.
Warm tortillas between paper towels and microwave for about 30 seconds per 5 tortillas. Spread about 2 tablespoons of meat filling on each tortilla, and top with about 1 tablespoon of shredded cheese. Roll the tortillas up and place the seam side down on the prepared baking sheet. Repeat until you use all the tortillas. Spray the roll-ups with cooking oil, or brush with some olive oil.
Bake for 15 minutes or until the tortillas are golden and crispy.
Serve with Cabot Sour Cream or some mashed avocados.
