One Bowl Zucchini Bread Recipe

It’s the season where our gardens are overflowing with zucchini. Rather than trying to pawn your excess crop on to your family, neighbors and friends, give our One Bowl Zucchini Bread recipe a try. This summer classic is easy to make, healthy and delicious. Our version is refined sugar free, using maple syrup and applesauce as our sweeteners of choice. But don’t worry, there are chocolate chips to satisfy those little kids too.

Preheat the oven to 375°F.

In a large bowl, mix together the oil, eggs, applesauce, maple syrup, and vanilla.

Add the flour, baking soda, and sea salt. Stir to combine.

Gently fold in the zucchini and chocolate chips (save a few to sprinkle on top).

Pour batter in a greased, or parchment lined, 9” x 5” loaf pan. 

Bake 45-50 minutes, or until a toothpick comes out clean. Cool for 5 minutes and then remove from pan.

Store leftovers in the refrigerator.
