Ingredients
1/2 lb salmon filet (with skin on)
4 tablespoons olive oil, divided
1 tsp lemon zest
1 tablespoon fresh lemon juice
4 garlic cloves, minced
1 teaspoon dijon mustard
3/4 teaspoon onion powder
1 & 1/2 teaspoon sea salt
1/2 teaspoon black pepper
1 broccoli crown, chopped into florets
1/2 cup parmesan, shredded
Directions
Preheat the oven to 400°F. Line a large baking sheet with parchment paper. Place salmon skin side down on the sheet.
In a small mixing bowl, combine 1 & 1/2 tablespoon olive oil, lemon zest, 2 cloves of minced garlic, dijon mustard, onion powder, 1/2 teaspoon salt, and pepper. Whisk well and drizzle over salmon. Top with lemon slices.
Arrange the broccoli around the salmon evenly, then drizzle with remaining olive oil, garlic cloves, and sea salt.
Bake for 20 minutes or until the salmon has cooked through. Sprinkle broccoli with parmesan.
