Grilled Peach and Arugula Salad Recipe

  • 2-3 peaches, quartered
  • 1 package arugula
  • 1 cup mozzarella, torn into small pieces
  • 1 cup extra virgin olive oil
  • 2 tbl white wine vinegar
  • 2 tbl fresh lemon juice
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • Prosciutto
Directions Preheat the grill to 400°F. Spray grill grates carefully with oil. Place peaches cut side down. Grill 4-6 minutes, until tender. Turn to achieve grill marks on all sides. In a large bowl, add arugula, mozzarella, prosciutto, and tomatoes. In a small bowl, or mason jar, whisk together olive oil, lemon juice, mustard, honey, salt and pepper. Drizzle over salad and toss to combine. Place peaches on the top and serve. Pro Tip:  Substitute your favorite vinaigrette for the dressing, use feta instead of mozzarella or try this salad with some fresh mint or basil.
