It’s the season where our gardens are overflowing with zucchini. Rather than trying to pawn your excess crop on to your family, neighbors and friends, give our One Bowl Zucchini Bread recipe a try. This summer classic is easy to make, healthy and delicious. Our version is refined sugar free, using maple syrup and applesauce as our sweeteners of choice. But don’t worry, there are chocolate chips to satisfy those little kids too.

- 1/4 cup olive oil
- 2 large eggs
- 1/3 cup applesauce
- 2 teaspoons vanilla extract
- 1 & 1/2 cups One Mighty Mill all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 cup loosely packed shredded zucchini
- 1/2 cup dark chocolate chips
